One of the major things this pandemic has done is completely screw up my concept of time. If Steven Michael didn’t wake up at 4am and go to work on the weekdays, I might forget to work myself. Luckily, I have him as a reminder to get up, get Ellis to school and get to work.
Based on my lack of time awareness, it shouldn’t have come as a surprise to me when I completely forgot to write this blog. So here I am at 8pm on Monday night, writing what will be published at 6:30am tomorrow morning. Whoops!
Things have started to pick up lately as more and more vaccinations are given and things begin to go back to “normal”, whatever that means at this point. I find myself actually having to use my planner to stay on top of things, and when I don’t, mistakes like today happen. A few weeks ago, we missed a Super Mario Plumbers workshop that we had signed Ellis up for at the local community center. Good thing we also forgot to tell him about it! (Parents of the Year)
I’m now calculating time based on our vaccine appointments. Steven Michael’s second dose was this past Friday, and mine is this coming Friday. You bet I wrote those suckers down in my planner! All plans now revolve around those dates and counting out two weeks. I’ll be honest and say that, while I’m excited that we will be protected, I’m also a little afraid of “re-entering” society. Though I’m sure I’m not the only one having those feelings.
I know you’re all completely riveted talking about my time management skills, but let’s switch gears and talk about chicken! The Burrito Fresco chicken to be exact. This weekend, we posted the previously super secret Burrito Fresco Taco Seasoning which was the basis for the restaurant’s flavor profile. You’ll need to make a batch of that up before attempting this recipe. You can use this chicken in taco, burritos, on salads or nachos, pretty much anything you can think of. We made tacos with Lime Pepper Sauce and Burrito Fresco Mild Salsa (coming soon). Pro tip – Keep the leftover broth and use it as a starter for some soup!
