Spinach Pesto with Cheese Tortellini - An easy, fast meal for any night of the week! This is packed with flavor and is sure to be a household favorite.

Spinach Pesto
 ½ cup Olive Oil
 4 oz Baby Spinach
 ½ cup Shredded Asiago Cheese
 1 tsp Fresh Oregano
 1 tsp Salt
Misc.
 1 lb Cheese Tortellini
 ¼ cup Sun Dried Tomatoes in Oil
 ¼ cup Shredded Parmesan Cheese

Set large pot of water on the stove to boil.

While waiting for the water to boil, add all pesto ingredients to a food processor and blend together on high.

Cook the Tortellini as directed on the package.

While the Tortellini is cooking, put the Sun Dried Tomatoes in a sauce pan on low to heat them up.

Drain the Tortellini then add them to the pan with the Sun Dried Tomatoes and mix.

Pour the pesto over the top and mix well before serving. Sprinkle some parmesan cheese over the portions in the bowls.
