Fish Foil Packet - A quick, easy dinner made with whole foods!
Preheat the oven to 425 degrees.
Combine water, salt and potatoes in a large pot and boil for 20 minutes until tender.
While the potatoes are boiling, combine the mayo, relish and dill in a small bowl. Mix thoroughly and set aside.
Pat the Mahi Mahi fillets dry and drizzle with olive oil. Season them with salt, pepper and lemon zest.
Place the fillets on two separate sheets of foil, a little over a foot long each should be enough.
Cut the ear of corn in half and place a piece on each foil.
When the salt potatoes are done boiling, strain them in a colander and let them dry until the salt crystalizes.
Put half of the salt potatoes on each piece of foil.
Put one tablespoon of butter on each piece of corn (we cut ours to cover the whole corn), and sprinkle one minced clove of garlic over each packet.
Squeeze lemon over the fish (and potatoes if you'd like).
Seal each foil packet tightly, leaving a tent like space between the food on the bottom and the top of the packet.
Bake at 425 degrees for 15 minutes.
Open the foil packet and enjoy! **BE CAREFUL - There will be steam trapped in the packet.
