Bang Bang Shrimp Bowls - Sweet, saucy popcorn shrimp with veggies and pineapple over lo mein noodles!

 2 cups Broccoli
 1 cup Petite Carrots
 ½ Yellow Onion
 5 oz Pineapple
 12 oz Popcorn Shrimp
 5 oz Lo Mein Noodles
 2 tbsp Olive Oil
 Salt & Pepper
 Scallions for Garnish
Bang Bang Sauce
 ½ cup Sweet Chili Sauce
 ¼ cup Mayo
 3 tbsp Honey

Preheat the oven following the instructions on the box for the shrimp.


Cut the broccoli off of the stalk, cut the petite carrots lengthwise, cut the onions into strips then in half, and cut the pineapple into chunks.


Steam the carrots and broccoli until just tender. Do not overcook.

**TIP** Throw the carrots in before the broccoli as they take slightly longer to cook.


As the veggies steam, set a pot of water to boil for the noodles.


In a pan on medium heat, lightly sauté the onions with olive oil and a little salt and pepper.


Add the pineapple when the onions are about halfway done.


Put the shrimp in the oven on a foil lined pan and cook as directed on the box.


Add the lo mein noodles to the boiling water and cook as directed on package.


While everything is cooking, mix the Sweet Chili Sauce, Mayo and Honey in a small bowl until completely combined.


Strain the lo mein when it is cooked, and divide into two bowls. Add two tablespoons of your Bang Bang sauce to each bowl and toss the noodles and sauce together.


Mix the cooked shrimp into the remaining sauce.


Build your bowls on top of the lo mein adding the veggies, pineapple, sauce coated shrimp and a sprinkle of scallions for garnish.
