Banana Rum Coconut Muffins - Your house will smell delicious!

 1 cup Sugar (and more for topping)
 1 stick Salted Butter (Salted)
 2 Eggs
 3 Overripe Bananas
 1 tbsp Milk
 1 tbsp Cinnamon
 2 cups All Purpose Flour
 1 tsp Baking Soda
 1 tsp Baking Powder
 1 tsp Salt
 1 tsp Vanilla Extract
 1 tsp Rum Extract
  cup Sweetened Coconut Flakes

Preheat oven to 325 degrees.

In a mixer, cream the sugar and butter together until fluffy then add the eggs one at a time.

Mash bananas in a small bowl, then add milk, cinnamon, vanilla and rum extracts and mix together.

Mix the remaining dry ingredients together in a bowl.

Add the banana mixture to the mixer and combine before finally adding the dry ingredients as well.

Mix all together until just combined, then spoon into a muffin tin with liners (3/4 full for each muffin).

Top each muffin with extra sugar before putting into the oven for 25 minutes.
