Mild/Hot Salsa – A Burrito Fresco Recipe

Hello, friends! Summer is winding down, but we’re not quite ready to let go of those summertime vibes. To fully take advantage of the last few weeks of sunshine, we’re sharing the recipe that started it all – The Burrito Fresco Salsa.

For those that don’t know, Steven Michael and I used to own the best restaurant in the world (not at all a biased opinion), Burrito Fresco. We served fresh home made food all day and long into the night from 2012-2016, and this salsa is what ultimately made us decide to open a Burrito Shop.

So here is it for all of you to enjoy! Whether you were a regular customer or are new to our blog, this FRESH salsa will not disappoint!

Onion Rings

Guys … I get to write a blog about one of my favorite things! ONIONS! As you know from my onion rant in The Peanut Stew Incident of 2021, I have an obsession with the (literal) stinkers. Bread those suckers and deep fry them and you’ll find me drooling at the table.

For Mother’s Day this past weekend, I ate a lot of my favorite things. My day started with Sprinkle Waffles, I had ice cream for lunch and I requested Turkey Meatball Subs for dinner. I wasn’t allowed to help with anything all day, so I got to relax with my feet up in the living room (it’s kind of my thing) while Steven Michael cooked dinner. Imagine my surprise when I heard the sizzle of something being fried, and my utter delight to find out they were homemade onion rings!

Lucky for all of you, Steven Michael was nice enough to document the process knowing that I would want to post about them! They were salty, crunchy and everything good about food that is terrible for you. Pass the plate, I want some more!

Babaganoush

I know many of you (ok, probably like 6 of you) were wondering what we were going to do with the eggplants we posted on our Instagram story this weekend. It’s time for the big reveal! Drum roll …… Oh, you read the title of the blog? Well crap.

Even an anticlimactic reveal like that can’t take away from how freaking tasty Steven Michael’s Babaganoush is. Now that many of our close friends are vaccinated, we’ve gone back to having a few people over every Sunday to play video games, basketball, or just hang out. Most of our friends are vegan, so we have a lot of great animal product free recipes in our repertoire, like this Babaganoush.

While Steven Michael was making this, I took absentee cooking to another level. I was not in my usual place with my feet up in the dining room, instead, I was on my Sunny stationary bike working/sweating my little butt off in the garage. Coming back in from my workout to a yummy spread of pitas and Babaganoush was a great perk!

This is seriously delicious. It has a smooth and creamy texture and is packed with great eggplant flavor. The garlic definitely gives it a little bit of a bite, and I couldn’t stop shoveling it into my pie hole.

So invite a few (COVID safe, obviously) friends over, make some dip and get to snacking! Or … just make a bowl for yourself and go to town, I won’t judge.

BONUS BLOG – Pickled Red Onions

Happy Friday and welcome to another BONUS BLOG! We like to throw these shorter recipe posts in to highlight techniques or simple recipes that pack a big punch. These Pickled Red Onions do exactly that. They are small but mighty, bringing huge flavor to any dish!

If you’ve been along on this journey with me from the start, you may remember my onion rant in our blog about the Peanut Stew Incident of 2021. Aside from rainbow sprinkles, onions are probably my number one food obsession. They are incredible raw, sautéed or caramelized, but take those scrumptious little veggies and pickle them in a sweet brine and EUREKA, you have a masterpiece!

These Pickled Red Onions will take any dish to the next level. We use them on tacos, sandwiches, quesadillas, salads – literally anything you can think of. You could, for example, add them to our Greek Chicken Pitas for an extra layer of flavor (hint, hint). Play with them! Use them in your own favorite meal and see how they enhance it.

Pre-COVID, we would have people over often, and these were always a hit. On multiple occasions, friends asked for the jar and a fork after the meal was over and just went to town on these bad boys. In fact, this was one of our most requested recipes from family and friends when they learned about this blog. We hope that you will find them just as addicting and always keep a jar on hand, like we do! Who knows, you just might need them for our next post coming out on Tuesday …

BONUS BLOG – Roasted Vegetables

I AM HAVING A LUCKY DAY! Guys, I am super pumped today. Since the moment I woke up this morning, everything has been coming up Bitsy!

First, I actually got a great night of sleep. With the help of some melatonin gummies, I was able to get some quality rest with a side of really trippy dreams. Then, Ellis got right out of bed and ready for school with no issues (this is HUGE).

At Starbucks this morning, I decided that today was the day to finally try their new Pistachio latte. This could have gone either way, but (spoiler) it’s super yummy. AND, when I got to the drive thru window, they gave me a free spinach & feta wrap that had been made accidentally. A FRIDAY MIRACLE!

To top it all off, about an hour after I logged into my work computer, I got a notification that there were required installs waiting – ugh. Normally, the installs are followed by a forced restart and having to relog into everything – a total bummer. BUT, today the installs just went through with no restart required! If your work computers do this, you know what a big deal this is.

And so, I have started singing my new catchy jingle every time something good happens to me.

I figured that as I’m having such a great day, I would spread some of the love around. So, here is a super special Friday BONUS BLOG on one of my absolute favorite sides a la Steven Michael.
