Tater Tot Breakfast Bowls

Sometimes you stumble upon greatness when you least expect it. That’s what happened over the weekend as Steven Michael was cooking us breakfast. What was going to be eggs and tater tots (because they are essentially hash browns) turned into something else entirely. Before we knew it, we were feasting on a bowl of tots, eggs, gravy, cheese and veggies. HECK YES!

We weren’t planning to use this for a blog post, but it was SO GOOD that we just had to share it with you! I’m sorry that we don’t have our usual pictures to accompany the recipe steps, but I promise it will be worth it if you decide to give it a try!

Tater Tot Breakfast Bowls - Everything you love about breakfast in one delicious bowl!

Yields1 Serving

White Gravy
 3 tbsp All Purpose Flour
 ½ cup Milk
 ½ cup Buttermilk
 2 tbsp Butter
 ½ tsp Black Pepper
 ½ tsp Salt
 ½ tsp Garlic Powder
 ½ tsp Onion Powder
Peppers & Onions
 ½ Red Onion
 ½ Green Bell Pepper
 2 tbsp Olive Oil
 Salt & Pepper
Misc.
 ½ Bag of Tater Tots
 4 Eggs
  cup Shredded Cheese of your choice (we used cheddar)
 Scallions for garnish

Preheat oven and cook tater tots per directions on the package.

White Gravy

As the tots are cooking, add all gravy ingredients to a pot on medium high. Whisk together until thickened, then remove from heat and set aside. Takes approximately 5 minutes.

Peppers & Onions

Chop the onion and pepper into a small dice.

Put olive oil in a pan on medium heat. Add the peppers and onions and sauté until onions are translucent. Season with salt & pepper to taste. Set aside when cooked.

Misc.

Cook eggs to your liking. We did ours over easy, but you can make whatever kind of eggs you want. Melt cheese over the eggs.

Build your bowls by layering tater tots, peppers & onions, eggs/cheese, gravy and scallions for garnish.
